This pocket has become one of our go-tos when everyone’s hungry but we’re on the move. Our kids prefer these over any other bread no matter what, so we make batches of these pita pockets every 2-3 weeks. We fill it with homemade hummus or plant-based cheese with chive or onion-flavors. Together with fresh veggies, it’s filling and healthy enough to keep the kids happy without the post-lunch slump, and it fits right into a backpack. We like it because it's real food — balanced, fresh, and quick — and resets us no matter where we are without burdening our already-packed schedules, since its so easy and quick to make.
