Cream Cheese Pita Pocket and Pancakes

This kid-friendly lunch box brings together the best of both worlds: a treat that feels indulgent and a savory bite that’s full of goodness. The vegan chocolate chip pancakes are made with wholesome ingredients—think whole grains, plant-based milk, and just enough dairy-free chocolate chips to keep it fun—offering fiber, slow-releasing carbs, and a touch of iron. Alongside them, a soft pita pocket filled with plant-based cream cheese, alongside fresh veggies that add crunch and vitamins. It’s a well-rounded, energizing lunch that keeps kids satisfied and nourished, without sacrificing flavor or fun.

There are a good variety of plain vegan cream cheese or other more flavorful options. I ran into a great chives cream cheese, onion cream cheese and even garlic spreadable of a number of really good brands. It's really up to your kids' taste buds!

Fresh Vegetables

Pair your sandwich with fresh vegetables and/or fruits. Here I added cucmbers, because my daughter really LOVES cucumbers, but anything from carrots and peppers, to olives and radishes will pair well - so many options to choose from! I recommend packing vegetables that are on the drier end. placing tomatoes for example in the same compartment as the sandwihc will make it soggy, but you can definitely pack up cherry tomatoes! So long as they're whole, there will be no struggle.
