Soft homemade challah rolls, a sweet chocolate chip almond cookie, juicy fresh fruit, and protein-rich soy nuggets — this lunch strikes a cozy balance between comfort and nutrition. The store-bought nuggets make things easy on busy mornings, while the homemade elements add a personal, wholesome touch.
Challah provides complex carbs and a bit of protein from the enriched dough, the cookie brings healthy fats from almonds (with just enough chocolate to feel like a treat), and the fruit offers fiber, vitamins, and natural sweetness. It’s a kid-friendly mix that feels familiar and fun, with plenty of plant-based goodness tucked into every bite.

Chocolate-Chip Almond Cookies
These almond cookies are packed with healthy fats, fiber, plant protein and micronutrients. One of my kids especially loves these, so when I make them, I pack it for him as a snack, but what he doesn't realize is that it's a booster for his actual meal - I make it with only 5 ingredients (tahini, almond flour, maple syrup, plant milk, and dairy-free chocolate chips) and the result is absolutely mouth-watering!
They're easy and simple to whip (everything goes in a bowl), and the bake period is only 12 minutes, so essentially, you can make it anywhere from home to your RV on the road, and enjoy a little comforting healthy dessert!
Fresh Fruits
I pack firmer fruits in the larger compartments since they hold up well without getting squished or losing their shape. Delicate ones, like raspberries or blackberries, go in a snug little container of their own to keep them from getting smashed in transit. Here as an example, I packed strawberries and bananas. Feel free to keep this category versatile.

While I don't usually bake when we travel [although I should try! My oven is absolutely capable :)], I always bring a batch of challah rolls from home, and keep them frozen (I also freeze them at home, to retain freshness). These are my kids' favorite bread, and they'll eat a sandwich with it or plain as-is for any meal, at home, at school, or as an energy boost when we hike!
