Soy Hotdog and Super Quick Pizza

Here’s a fun, comfort-food-style lunch that’s big on flavor and still packed with plant-based goodness. A soy hotdog offers a quick, kid-friendly protein option, while the mini pita pizza — topped with homemade marinara sauce and a sprinkle of vegan parmesan — adds that cheesy, saucy satisfaction kids love.
This lunch box is easy to put together, especially on busy mornings, but it still brings in solid nutrition: protein from the soy dog, lycopene and vitamin C from the tomato sauce, and healthy fats from the vegan cheese. It’s a playful, filling combo that feels like a treat but keeps things balanced and nourishing.
A Small Side of Fresh Vegetable
A great option I'm showing here is how to use a small silicone dish to compartmentalize the lunch box so that the vegetable remains separate from the other foods, and by that everything maintains their original flavors and textures.
Here I added cucumbers, but really, in this vibrant category, so many options go! Add carrots or bell peppers, or cherry tomatoes or even celery. It all comes down to what your kid likes...

Choose a product that has a healthy amount of protein (hence, the soy in our choice) and additional nutritional value, as possible.
Super Quick Pizza
Follow my recipe here for marinara sauce.
Follow my recipe here for Pita pocket, or use store-bought Pita pocket, and open it in 2, so the inside of the pita pocket is now a flat 1-layer. Evenly coat the inside of the pita pocket with marinara sauce, and sprinkle vegan parmesan cheese. You can add your kid's favorite vegetable as a topping or leave it plain. Place in an air fryer or toaster oven for 5 minutes. Done!
