There’s nothing quite like a glass of cold, homemade lemonade — tangy, sweet, and incredibly refreshing. This classic version is made with just a few ingredients and comes together in minutes. It’s endlessly adaptable, whether you like it more tart, more sweet, or infused with fresh herbs or fruit.
Get your kids to put up a lemonade stand, which will surely get them the lemonade-experts reputation around the neighborhood! Pairs well with brunch or dinner, and you can even pack it in an insulated bottle for any hot day out of the house.

Ingredients

  • 4 lemons

  • ½ lime (optional)

  • ¾ cup sugar (adjust to taste)

  • 4 cups cold filtered-water

  • crushed ice, for serving

Lemon slices and mint (optional, for garnish)

Instructions

  • Squeeze the lemons and strain out any seeds or pulp if desired.

  • Combine the lemon juice and sugar. Stir well until the sugar fully dissolves.

  • Pour the mixture to a large pitcher, add the cold water and stir again. Taste and adjust — more sugar for sweetness, more lemon juice for tang.

  • Chill in the fridge or serve immediately over ice.

  • Garnish with lemon slices or a sprig of mint if you like.

Notes

If a different sweetener is used, consider avoiding dark sweeteners like coconut or brown sugar, as it will significantly darken the lemonade, and affect its taste.

No-Bake Pistachio Ice Cream Cake

I love ice-cream cakes, and it is so hard to find vegan ones in stores, so I knew at some point I'd want to try and whip a recipe up, but one thing that's always a factor for me is whether or not it'll be a time-consuming project or not. If I need to use my mixer, food processor or oven, it means I need to plan for more dishes and more time spent on this, and that's where I sometimes hold off on exploring and developing new recipes. I was not only aiming for an easy-to-make recipe here, but also one that requires very few ingredients and as allergen-friendly as possible. This makes it a store-in-the-freezer dessert for when I have unexpected guests, or when we are on the road and want an indulgent treat.
Made primarily from raw pistachio butter, coconut cream and almond flour, this easy no-bake cake is elemental and holds texture and flavor impressively. Compliments are guaranteed!
