Irresistible desserts served in little jars - charming, practical, and endlessly customizable. These mini layered treats are perfect for picnics, parties, or anytime you want to impress. Using wholesome, plant-based ingredients like fresh fruit, vegan yogurt, crunchy cookies, and a touch of sweetness, these desserts are a breeze to assemble and are balanced in flavors, so aren't heavy at the end of a meal. This version comprises homemade berries preserve, but you can easily use a good store-bought option to make it even easier to put together. I also used here a homemade vegan meringue, which is a little tricky to find in a store-bought version, so it can be skipped if you don't have the time, energy or a proper mixer to make it. Even without the meringue, the 3 other layers will create a perfectly glorious result!
Ingredients
Each layer should take up about a 1/3 of a mason jar, if using 4-6oz jars
About 3 cups berries preserve (follow my recipe here, or use a store-bought option)
1 pint plain (or vanilla) plant-based yogurt (any kind)
Vegan meringue crumble (follow my recipe here)
7oz (200g) cookies you can crumble (tea biscuits for example)
Instructions
Choose Your Jars: Use small glass jars or cups - 4 to 6 oz jars work perfectly for individual portions.
Start with Crunch: Add a spoonful of crumbled cookies or biscuits to the bottom of each jar. This forms the base and gives a nice crunch.
Add Creaminess: Spoon in a layer of plant-based yogurt over the cookies.
Sweeten it Up: Swirl in a tablespoon (or two!) of strawberry preserve for a touch of natural sweetness.
Crunchy Extras: (I recommend adding this layer shortly before serving) Top with vegan meringue crumble for extra texture and flavor - but be sure to do so close to serving, as the meringue gets soggy and 'melts' around moisture.
Repeat or Top It Off: If using larger jars, repeat the layers for a more decadent jar.
Chill or Serve Immediately: These desserts can be enjoyed right away or chilled for up to 24 hours. Just add delicate toppings like meringue right before serving to maintain crunch.
Notes
For a gluten-free, soy-free and nut-free recipe, check the label of any store-bought ingredients to confirm they are free of these allergens.
To make ahead, bake the meringue and cook the preserve even days in advance, and keep the elements separate until serving time to prevent sogginess and maintain maximum freshness.
