GF Bite-Size Rolls

These savory bites are quick to make, full of flavor, and finished with a satisfying crunch from a sesame–everything bagel coating. With minimal prep and no fancy tools required, they’re a perfect go-to for snack platters, lunchboxes, or casual get-togethers. Soft on the inside and golden on top, they come together in under 30 minutes and look just as good as they taste.

Ingredients

4 cups (18oz/520g) fine almond flour

11oz (320g) plant-based greek yogurt or cream cheese (for a soy-free recipe, choose a soy-free vegan yogurt/cheese)

1 tsp baking powder

80g raw sesame + 50g everything bagel mix

Instructions

  • Preheat the oven to 370F/190C, and line a baking pan with parchment/baking paper.

  • In a mixing bowl, combine all the ingredients except for the sesame and everything bagel, until consistent.

  • with moist hands (wet them with tap water), roll approximately 35 balls that are about 1.5'' in diameter.

  • On a flat dish, combine the sesame seeds and everything bagel, and mix.

  • Roll each ball in the mixture and place on the baking pan.

  • Bake for 20 minutes or until the top is golden.

  • Let them cool on a cooling rack before serving.

Notes

  • If everything bagel mix is not your thing, simply coat it entirely with sesame seeds.

  • Avoiding both coatings is optional too, but these bites do get a lot of their flavor and outer crust from the coating.

Fig and Beet Salad

When we hosted a summer dinner recently, we wanted something that felt fresh and thoughtful without requiring a lot of time or fuss in the kitchen. This salad came together naturally—raw yellow beet for crunch and earthiness, sweet dried figs for a touch of richness, and peppery arugula balanced by the light, delicate alfalfa sprouts. The date-mustard dressing adds just the right hint of sweetness and tang to bring it all together. It wasn’t meant to steal the show, but quietly complemented the meal and fit perfectly with the relaxed, easygoing atmosphere we hoped to create.
